Yield: 10 slices

Materials

  • 4 tbsp ketchup
  • 2 tbsp brown sugar
  • 2 tbsp vinegar
  • 2 tbsp olive oil
  • 1 big onion diced
  • 2-3 cloves garlic chopped
  • 2 eggs
  • 0.5 tbsp dried thyme
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 8 tbsp yogurt
  • 1 kilo minced meat
  • 13 tbsp breadcrumbs
  • 8 slices bacon
  • salt/pepper

Instructions

  • For the sauce, mix the ketchup, brown sugar and vinegar and set aside.
  • Heat the oven to 175 degrees. Bake the meatloaf for 1 hour until tender. Wait 10 minutes before slicing.
  • Fry the onion and garlic for 5 minutes in the oil and set aside.
  • Mix the eggs with the thyme, a lot of salt and pepper, mustard, Worcestershire sauce and milk. Put the minced meat in a large bowl and mix the egg mixture, bread crumbs, parsley and onion mixture through.
  • Mash with a fork until well blended and doesn't stick to the edge.
  • Place the meat on the counter and make a loaf shape with wet hands.
  • Put aluminum foil on the oven rack, poke holes in it and put the meatloaf on it.
  • Spread the sauce and cover with the bacon crosswise. Put the rack in the oven with a baking pan beneath it to catch the fat.
